Country Kitchen Soup Recipes

Are you looking for soup recipes? If so, I hope I can provide the recipe you're looking for. I have been making homemade soups for so long that some of my friends and family nickname me "Souperwoman". As a child my Mum always had a pot of soup on the stove and I learned from very early on, the fun and delight of experimenting to make unusual soups. Often I never made the same recipe twice, as I'd vary some of the ingredients or herbs.

If you travel, you will notice that soups are on the menu wherever you go, wherever you are in the world; and it is my intention to share with you some worldwide soup recipes that you can try at home. Soups feature in every cuisine around the world. Of course, they are sometimes known by different names such as broths, chowders, potages, gumbos and consommes.

Soups are extremely versatile and can be made very simple to the more adventurous. Some make wonderful starters, whether nice winter warmers or cool chilled soups, while others make delicious lunches, and others are a meal in themselves.


Many people's first attempts at soup making are just putting some vegetables and stock cubes and seasoning in a saucepan and letting it simmer away until cooked. It can be served with all the chopped vegetables in small pieces or it can be blended or sieved to produce a smooth creamy style soup. Each country and even region and indeed each family might have their own favourites soup recipes.

Homemade soups are not hard to make, although some take a bit more time and effort than others. Everyday soup is nutritious and healthy and often low in calories. Some are real 'comfort food', while others are a fabulous addition to a dinner party. Many soups are totally suitable for vegetarians, while others are rich and meaty and can be used almost as a delicious meal in their own right.


Making soup is suitable for young people and elderly alike as well as everyone else. You can often make a huge pot which is relatively cheap and which will keep in the fridge for days or be frozen. One of the exciting things about soup making or should I say 'soup creating' is that you really can experiment and create your own unique and special dishes. Once you know some of the basics - the variations and choices of your creations will know no bounds.

You can use fresh inexpensive and/or home-grown ingredients or buy in unusual ones to create a masterpiece. Whether you live alone, are a student on a strict budget, feeding a growing family, or a cook who likes to create really 'showy' masterpieces for your guests, homemade soups is an area where everyone can be successful and creative.

One of the things that is common to all worldwide soup recipes is making a delicious Stock as the base. Of course in our modern world we can buy ready made stock, but there is nothing quite like homemade stock as your starting point for a good bowl of homemade soup. We will be looking at making :-

We will also look at some of the equipment you will need to make soup. Indeed all you will need are basic tools that you probably already have in your own kitchen:-

  • A chopping board
  • various sharp knives
  • vegetable peeler
  • wooden spoon
  • measuring scales, cups or spoons
  • saucepans
  • liquidizer or blender and a
  • ladle
But if you make a lot of soup some kitchen gadgets will really come in handy. But we will look at that later. There are of course many sophisticated tools but to be honest, you can make excellent soups using the simple tools you already have in your kitchen.

  • Flavourings and seasonings, including herbs and spices

  • Garnishes - from croutons and herbs to cream
  • A variety of vegetables and pulses
