As with both the corn and potato soups, there are so many different tomato soup recipes that I have kept it as a section on its own right, rather than just part of the vegetable soups.
There are dozens of varieties of tomatoes, and some recipes state particular types.
Tomatoes are a rich source of several nutrients. They are well known for their high vitamin C content, but also contain significant amount of vitamin A, B vitamins including niacin and riboflavin, magnesium, phosphorous and calcium as well as also a good source of chromium, folate and fibre.
In recent years the nutrient lycopene which is found in tomatoes, has been reported as having disease fighting abilities, believed to help prevent prostate. breast, lung, endometrial, pancreatic, bladder, cervical and skin cancers, and as a general antioxidant it helps to protect our bodies from the damage of free radicals.
The fibre in tomatoes also helps lower cholesterol levels, helps prevent colon cancer and helps to keep blood sugars at a low level. They are a good source of riboflavin which has been shown to be helpful for migraine sufferers by reducing the frequency of their headaches.
It is also worth noting that when tomatoes are cooked or tinned they are just as good nutritionally, as raw.
However, tomato seeds can give a slight bitter taste - so some of the recipes suggest de-seeding them and the skins. To do that, just:
Place each tomato in boiling water for just half a minute.
Using a spoon with holes, remove from the boiling water
Using a sharp knife, make a cut at the base
Run under cold water, and the tomato will peel easily
Cut each tomato in half and using a teaspoon scoop out the seeds, discarding the hard core.
Quick & Easy Tomato Soup
16oz / 450 g tin chopped tomatoes 1½ pts /900 ml vegetable stock (or water, if you don't have stock) 16oz / 450 g tin chopped tomatoes 4 tbs chopped spring onions 1 small eating apple Salt & freshly ground pepper to taste 1 tsp brown sugar ½ tsp dried paprika chopped chives or parsley to taste
Put the tomatoes and juice, onions, stock in a saucepan
Bring to the boil
Peel and grate the apple
Add apple, salt & pepper to the soup
Add the sugar & paprika
Put on lid
Simmer for 10 minutes
Serve piping hot
